In the Jenko family, the olive tree is a traditional plant, because it has been, just like on every other Istrian farm, indispensable for generations. In the 1990s, we planted three olive groves. Carefully cultivated olives grow on them under the warm Mediterranean sun. They have been the basis for top quality olive oils for decades. Great effort, care, familiarity with the characteristics of the olive tree, the desire for new knowledge and the desire for quality have brought the Jenko olive oil from a popular local product to one that is recognized by Slovenian and international awards. Today, our oils are among the most prestigious in the world.
The olives are harvested by hand at optimal maturity. The perfect fruits are cold pressed on the same day as when they are picked, using only mechanical procedures in accordance with the strict requirements for organic olive processing. The variety range is dominated by the native Istrian Belica, however, the Leccino, Maurino and Frantoio varieties also decorate our olive groves. The indigenous Štorta variety makes sure that table olives are also present at the dinner table.
In the cellar, the oil is filtered to remove the last solid particles. It waits for bottling at controlled temperatures and is protected by nitrogen. Thus, it maintains top quality throughout the year.
